Sugar Free Cinnamon Spice Simple Syrup (Erythitol based)

2026-05-16 made this batch. 1/2 batch was sufficient for 2 liters of apple cinnamon drink mixer, remainder went to the fridge.

  • 4 cups distilled water, plus a little extra to account for absorbtion into the cinamon sticks and evaporation during processing
  • 1.5 cup erythitol
  • 15 cinnamon sticks
  • 3/8 tsp xanthan gum
  • 1 tsp pumpkin spice extract

Bring water with cinnamon sticks to boil, slow simmer covered to minimize evaporation. Mix erythitol and xanthan gum in a bowl to blend ingredients so xanthan gum will disolve easily. Remove and discard cinnamon sticks. Whisk in dry ingredients to disolve, add pumpkin spice extract. Mix over heat to counter the cooling of the added erythitol, no need to bring to boil. Allow to cool, bottle for storage.

Not as sweet as sugar syrup, but too much erythritol can result in crystalization. Most recipies limit erythritol to 3/4 cup to 1 cup erythritol to 2 cups distilled water as a maximum concentration. Some recipes suggest adding a few drops of stevia liquid sweetener. Can boost the sweetness without introducing much stevia flavor which many find objectionable. Additional erythritol can be added to drink mix ingredients, for example 3/4 cup erythritol added to 64oz apple juice/cider.
