Homemade Irish Cream Liqueur

Step 1:

  • 1 1/2 cups Smooth, Mild Whiskey (contrary to assumptions, you don’t need to use Jameson)
  • 1 can (14 oz.) Condensed Milk (do not use evaporated milk)
  • 1 TB Chocolate Syrup
  • 1 1/2 tsp Instant Coffee
  • 1 tsp Vanilla
  • Pinch (~1/8 tsp) Ground Nutmeg

Using a blender or bowl/whisk combination, thoroughly mix the ingredients.

Step 2:

  • 1/2 cup Heavy Whipping Cream

Fully mix in heavy cream. Bottle and refrigerate until used.

  • 1 750ml bottle Irish whiskey
  • 2 14oz/415ml cans of condensed milk
  • 1/2c/120mls of heavy cream
  • 3 tblspn/45mls honey
  • 3 tblspn/45mls vanilla extract
  • 2 tblspn/12g unsweetened cacao/cocoa powder
  • 2 packets instant coffee

Blend blend blend, bottle, refrigerate, and serve over ice.

1 Litre Homemade Baileys

Ingredients:

  • 1.5 cans (18 oz / 531 ml) evaporated milk
  • 340 ml Irish whiskey - any whiskey/whisky of choice if no Jameson
  • 150 ml sweetened condensed milk
  • 2 tbsp chocolate syrup (or 1.5 tbsp cocoa powder dissolved in water)
  • 1 tsp instant coffee
  • 1 1/2 teaspoon water
  • 1 tsp vanilla extract
  • Pinch of salt (optional)

NOTE: I say a tablespoon of coffee and 1 1/2 tablespoon water - It is teaspoons!

Follow the recipe above for an excellent copy. I adjusted sweetness.

Store in a clean, sterile bottle and refrigerate for up to 3 months.
