Homemade Irish Cream Liqueur

Step 1:
- 1 1/2 cups Smooth, Mild Whiskey (contrary to assumptions, you don’t need to use Jameson)
- 1 can (14 oz.) Condensed Milk (do not use evaporated milk)
- 1 TB Chocolate Syrup
- 1 1/2 tsp Instant Coffee
- 1 tsp Vanilla
- Pinch (~1/8 tsp) Ground Nutmeg
Using a blender or bowl/whisk combination, thoroughly mix the ingredients.
Step 2:
- 1/2 cup Heavy Whipping Cream
Fully mix in heavy cream. Bottle and refrigerate until used.

- 1 750ml bottle Irish whiskey
- 2 14oz/415ml cans of condensed milk
- 1/2c/120mls of heavy cream
- 3 tblspn/45mls honey
- 3 tblspn/45mls vanilla extract
- 2 tblspn/12g unsweetened cacao/cocoa powder
- 2 packets instant coffee
Blend blend blend, bottle, refrigerate, and serve over ice.

1 Litre Homemade Baileys
Ingredients:
- 1.5 cans (18 oz / 531 ml) evaporated milk
- 340 ml Irish whiskey - any whiskey/whisky of choice if no Jameson
- 150 ml sweetened condensed milk
- 2 tbsp chocolate syrup (or 1.5 tbsp cocoa powder dissolved in water)
- 1 tsp instant coffee
- 1 1/2 teaspoon water
- 1 tsp vanilla extract
- Pinch of salt (optional)
NOTE: I say a tablespoon of coffee and 1 1/2 tablespoon water - It is teaspoons!
Follow the recipe above for an excellent copy. I adjusted sweetness.
Store in a clean, sterile bottle and refrigerate for up to 3 months.
