Peppercorn Chicken
4 pieces bacon. Cook and remove.
2 lbs chicken breast.
1 tsp salt.
2 tsp crushed peppercorn. Possibly more.
Coat and cook in bacon grease. Take off when done but keep warm.
Same pan. 1/4 stick butter. 1/4 cup chopped shallots. Cook until brown.
Add 1/2 cup chicken broth. Let cook until a glaze and thickens.
Add 3/4 cup heavy cream / whipping cream. Let it simmer.
Add 1/4 stick butter and simmer until mixed.
