SPICY RED ONION RELISH

Time: 15 minutes, plus 30 minutes' macerating

  • 2 small or 1 large red onion, peeled
  • 1 tomato
  • 3 tablespoons chopped cilantro leaves
  • 1/2 teaspoon hot red pepper flakes, more to taste
  • Salt and freshly ground black pepper
  • Juice of 1 lemon.
  1. Cut onions in half, and slice into thin half-moons. Place in a bowl.
  2. Halve tomato and discard seeds and pulp. Dice tomato and add to onion.
  3. Add cilantro and pepper flakes, and season with salt and black pepper to taste. Add lemon juice, and stir well. Allow to macerate at room temperature for 30 minutes before serving.

  • 4 teaspoons lemon juice
  • 1/4 teaspoon paprika (the redder in color, the better)
  • 1/8 teaspoon cayenne pepper

And try variation:

  • 200g tomatoes, diced
  • 1 medium onion, diced
  • 4 tbsp chopped coriander (or parsley/mint)
  • 1/2 tsp cumin, roasted and ground
  • 1/2 tsp cayenne pepper
  • 2 tbsp lemon juice or vinegar
  • 3/4 tsp salt

Combine everything and serve. Hand choppers which have a 'plunger action' or a mini electric chopper are the easiest way to get and even size piece from all the ingredients. No rules about this though. You can add finely chopped ginger, more mint, omit the cayenne - just combine the lot and eat.

Fiery Onion Relish

  • 1 cup minced onion
  • 4 tsp fresh lemon or lime juice
  • 1/2 tsp sweet Hungarian paprika
  • 1/4 to 1/2 tsp cayenne pepper
  • Salt to taste

If you prefer your onion to be less pungent, soak it in salted water to cover for about 30 minutes, then drain and rinse it.

Combine all ingredients and set them aside for about 30 minutes while the flavors blend.

This relish should be spicy hot, so add as much cayenne as you dare! Refrigerated, this will keep for several days.
